Classification: PGI Thessaloniki
Category: Dry white

Varietal composition: 100% Chardonnay

Origin - Vineyard: Askos area, Thessaloniki region, Central Macedonia. “Toumba” sub-region. 2ha of linear, privately owned vineyard situated at an altitude of 500-550m.

Harvest: Second half of August

Vinification: Pre-fermentation cold soak-skin contact, long-lasting alcoholic fermentation in inox tanks, to be followed by 2-3 months “sur lie” maturation in French oak, with frequent stirring.

Wine description: Typical Chardonnay with a fresh character that brings to nose freshly cut citrus fruit. Taste opulent flavors of grapefruits and limes with a veil of honey due to its short encounter with oak. Mouth-watering for food wine.

Wine and food pairing: Enjoy with spaghetti al pesto, risotto with seafood or lobster, fleshy grilled fish, rabbit, and poultry in white sauce. Excellent pairing with aged Sohos ‘kasseri’ cheese, Greek Gruyere and ‘metsovone’ cheese.
