Regional Wine of Thessaloniki

Varietal composition:
50% Cabernet Sauvignon - 50% Merlot

Harvest: End of August for Merlot, first ten days of September for Cabernet Sauvignon

Vinification: Classical red wine vinification, each variety vinified separately. After alcoholic and malolactic (when occurring) fermentation, first blending takes place. 12month ageing in French and American oak follows, during which the wines are racked two to three times. 6month post bottling maturation.

Wine Description: A modern expression of the classical Cabernet Sauvignon - Merlot blend. The different nuances of the varieties are well presented at the nose. In the mouth it is soft in the beginning, to become rich and well-structured, with an aromatic lingering finish.

Wine and food pairing:
Served at 16-18°C it is a perfect match for grilled meat, roasted lamb and red sauce meat casseroles.
